Executive Chef Alex Chong brings his innovations to the amorous fare made of the freshest natural ingredients, prime meats and finest selection of vegetables and secret recipes in the season’s latest menu at the cozy vibe of the Riviera Café and Roof Garden Terrace.

At the Riviera Café, begin the love affair with food at the Asian and Western Appetizers Corner. Delight in  Jelly fish with century egg and pickled ginger, Baked Fish  Fillet with Mango Tandori Sauce, Prawn Salad with Shallot and Roasted Coconut, Asian Chicken Noodle Salad with Sweet Soy Sesame Vinaigrette topped with Sesame Seeds, Asparagus and Smoked Salmon Salad, Scallop Mouse with Saffron Sauce and Fisherman’s Stuffed Potato.

Increase the good luck and chances of a loving and harmonious relationship while partaking of the On-going Chinese New Year Special popularized by the Heritage Hotel. Partake of the Fatt Choy Yee Sang for Valentine’s to attract positive energies of abundance and long life for couples and families alike. For the calorie-conscious, stopover at the Salad Station - Variety of Salad on Ice-  Selection of Oriental fresh seasonal spring vegetables .Choice of dressing –  Italian,  Sesame Vinaigrette,  Mango Vinaigrette, Balsamic Vinaigrette.

Participate in the Yu Sheng Prosperity salad ceremony and have a first hand experience of the traditional “Lo Hei!” which is Cantonese for "tossing luck" with special someone, family and friends. This ingenious dish traces its roots in Singapore and Malaysia. Diners make a wish and shout “Lo Hei!” for good fortune while mixing and flinging the ingredients together with chopsticks.  The Yu Sheng Prosperity Ceremony follows a sequence of steps. First of all, each dinner must great each other with warm greetings. Then, the fish, symbolizing abundance or excess through the year, is added to the main ingredients and followed by lime for luck. Pour the next ingredients such as pomelo over the fish to add both luck and auspicious value, pepper to attract more money and valuables, oil to increase all profits 10,000 times and to encourage money to flow in from all directions, carrots for more blessings of good luck and shredded white radish for prosperity in business and promotion at work. Lastly, add the condiments such as peanut crumbs to symbolize a household filled with gold and silver, sesame seeds for flourishing business, golden pillows crispers to signify the floor filled with gold. Simply mix everything together and push all the ingredients to the center. All toss the salad an auspicious seven times with loud shouts of “Lo Hei!” for personal wishes in business and matters of the heart.
 
All The Way to Culinary Thrills
Couples must also try, the Riviera Café’s signature Malaysian and Singaporean dishes particularly the Satay, Hainanese Chicken Rice and Laksa. Don’t miss the Satay, the trail of this mouth-watering aromatic scent precedes is a favorite Singaporean street hawker’s delight, leading you to the fresh-off-the-grill savoury chicken, mutton or beef steeped in a sweet-spicy marinate. This must-try gastronomic treat tastes best with a punchy peanut sauce for dipping, and fresh cucumbers, raw onion and steamed rice cakes on the side. On the other hand, Laksa Sizzlethe dinners’ senses with the irresistible concoction of noodles made from rice flour swathed in velvety gravy made from spices, herbs, dried shrimp, coconut milk and chili. Most importantly, pour the heart’s gusto to Hainanese Chicken Rice, the provocative fragrant rice cooked in chicken stock and other secret ingredients, impeccably accompanied by steamed or roasted chicken and the contrasting flavours of dark soy sauce, ground ginger paste, and chili sauce on the side.

For some grilling action, sample the fresh Red Mullet, Squids, Salmon Belly, Red Snapper, Rib Eye; Herb Marinated, Barbeque Marinated Chicken, Chicken / Beef Satay, Served with 6 type of Barbeque sauce. Satiate the carnivore cravings at the carving nook for Roast Rib Eye with Prime Ribs, Baked Salmon, Beef Wellington or Roasted Stuffed Lamb Leg Served with sauces.

Go for Chinese favorites such as the Steamed Hand-Made Hong Kong Dim Sum in Bamboo Basket, Teow Chew Porridge & Condiments - Braised pork belly with salt yellow bean, Egg omelette, Pickle lettuce, Olive vegetable, Salted egg / century egg, Braised soya duck, Sichuan vegetable, Preserved beancurd and Wok fried roasted pork with soya sauce.

Turn Japanese with heaps of fresh sushi  – Lapu Lapu / Salmon / Tuna / Squid & Seaweed / Unangi and Assorted Maki.

Talk Italian while satiating the appetite for pasta. Relish the Tortelloni al Pomodoro - Hand-made, ricotta filled pasta with a plum tomato sauce, .Pappardelle al Sugo -  Homemade flat noodles with classic Bolognese sauce or Penne all'Arrabbiata -  Quill-shaped pasta with tomatoes, herbs, pancetta & spicy sausage.

Gastronomic Luck and Fantastic Futures Foretold at the Heritage Hotel’s Year of the Golden Rabbit Bash

 
  









Over at the Manila Bay area and further to the famed Roxas Boulevard, one of its key landmarks – the Heritage Hotel Manila, the premiere 5-Star International Deluxe Hotel ushered the Chinese Lunar New Year with the ceremony of the Yu Sheng Prosperity Salad Toss which it first popularized in town among the business community. The unique tradition is now quickly gaining grounds as a novelty among locals and thereby inducing other Hotels and restaurants to offer it on the menu.

As part of the Millennium Hotels and Resorts with a number of sister property Hotels in Singapore and Malaysia, the Heritage Hotel continues to spread the trailblazing gastronomic goodness of the Yu Sheng Good luck toss as shared by members of the diplomatic corps, corporate head honchos and media personalities during its recent Chinese New Year fete at the Artists Ballroom.

The spacious venue hall was adorned with gigantic Chinese golden coins, dozens of cherry blossoms and graced by a tandem of fortune tellers, a calligrapher & a pair of rhythmic traditional lion dancers punctuating the opening salvo for the Year of the Golden Rabbit.

The Heritage Hotel General Manager Mr. Eddie Yeo cited Singaporean Feng Shui Expert Lynne Yap in his welcome speech that “If good things happen on first day of the Chinese New Year, then great things will happen for the rest of the year.”

In this light, it’s always wise to cultivate good karma. The Heritage Hotel launched its Good Corporate Citizenship program via its wishing well cum fund raising facility for the benefit of Asilo de San Vicente de Paul (ASVP), one of the oldest orphanages in the Philippines, in operations for 125 years and focused on the uplifting the state of poor and needy children and the youth through provisions for basic needs, education, social support and spiritual development.

Posh guests turned the page from sowing the seeds of kindness to flinging techni-colored ingredients for symbolisms of abundance, prosperity, harmony and good health. The Hotel’s Marketing Communications Manager Mina Gervacio and its Executive Chef Alex Chong led the well-heeled crowd to the auspicious Yu Sheng ceremony.

Armed with chopsticks, guests tightly huddled with others around the table for mixing and tossing the rainbow-colored array of ingredients: fresh raw salmon, lime, pomelo, pepper & 5-spice, oil, carrots, plum sauce, lime, sesame seeds, peanut crumbs and crackers over the multi-hued & shredded raddish whilst shouting “Lo Hei!” with gusto and making wishes of joy and great things to come.

The healthy and lucky appetizer was ensued by the delectable Lunar New Year Cocktails of Roast Duck, Hainanese Chicken Rice, Laksa, Mee Goreng and hand-made Chinese dimsums and dumplings.

Fabulous raffle prizes of an Overnight at an Executive Suite at the Heritage Hotel, 3 Days, 2 nights stay at sister-property Hotels in China particularly Millennium Hotel Wuxi and Millennium Harbourview Hotel Xiamen were given away during the program.
               
One of the key highlights of the night was the fearless forecast of Prof. Charlie Chao, renowned Feng Shui Expert, former president of the International Institute of Chinese Esoteric Sciences Studies Inc. and a guest Professor of Fuzhou Teacher College of Fujian, China.

For 2011, Prof. Chao highlights, “... the metal element is on top of the Rabbit, which has a wood element at the bottom. In Chinese I-Ching, this scenario is for wealth. Hence, it is a sign of prosperity. Accordingly, the world economy and the current financial situation will improve and continue its recovery and turn for the better… Real estate, construction, telecoms, media, hotel and tourism will have bright prospects.”
